Sous Vide Experiments

I finally got my sous vide assembled this weekend. Inspiration came from seattle food geek
Lessons learned:

  • With the probe I used occasionally the readings get really jumpy when the relay switched off. Trust me  it's not fun to see the control breaking down just when the water temperature homes in on medium rare. I've now managed to solve it with some help from http://mythopoeic.org/sous-vide-cooking/. I had to connect the shield on the probe to one of the connection wires. 
  • My 16W acquarium pump is too powerful for the water bath and the food tend to swim around in the container because of it.
  • When I tried to laser cut holes in the acrylic container things got nasty and it started smoking and smelling like plastic soldiers meeting a candle. 
  • The ribeye came out excellent regardless of the control loop failing, can't wait to try it on more food.
